How much couscous per person?

Side versus main-course quantities

Choose 50–60g when couscous accompanies meat, fish or several vegetables. Use about 75g when it is the foundation of a grain bowl. Chickpeas, halloumi and roasted vegetables make the lower end more substantial.

Dry-to-cooked yield

Couscous usually grows to around two to two-and-a-half times its dry weight after hydration. A 60g dry side portion often gives about 130–150g prepared, although brands and standing times vary.

Couscous-to-water ratio

For instant couscous, equal volumes of dry couscous and just-boiled water are a useful starting point. Some brands need slightly more liquid, so prioritise the packet. Pearl or Israeli couscous is a different product and normally simmers like pasta.

How to make fluffy couscous

Put couscous in a heatproof bowl with a pinch of salt and a teaspoon of oil. Pour over the measured hot water or stock, cover and leave for 5–10 minutes. Separate the grains gently with a fork, adding a teaspoon of oil or a squeeze of lemon if needed.

Cooking couscous for two

For two side portions, measure 100–120g; for two grain bowls, use 150g. Hydrate in a bowl wide enough to fluff comfortably, then divide before adding toppings if the two servings need different flavours.

Flavour additions

Use stock instead of water, or add lemon zest, parsley, mint, toasted seeds or finely chopped dried fruit after fluffing. Add wet ingredients after hydration so they do not upset the water ratio.

Storage

Cool prepared couscous promptly, cover and refrigerate within two hours. Eat within 48 hours or freeze, following Food Standards Agency guidance for leftovers. Reheat once until steaming hot, or eat properly chilled.

Common couscous problems

Too much liquid makes couscous heavy; too little leaves hard grains. Avoid stirring constantly while it hydrates. If it is slightly wet, spread it on a wide plate for a few minutes and fluff again.
