How to cook rice

Beginner guide to cooking rice, including water ratios, stove method, resting, fluffing, basmati rice and leftover rice safety.

Quick answer

For white basmati, rinse 75g rice per person, add about 150ml water per 75g, cover and simmer very gently for 10–12 minutes. Turn off the heat, leave covered for 10 minutes, then fluff.

Rice to water ratio

A useful starting ratio for white basmati is one part rice to two parts water by volume. Brands and pans differ, so check the packet and adjust after your first batch.

Stovetop method

Rinse until the water is less cloudy. Put rice and measured water in a small lidded pan, bring to a boil, stir once, cover and turn to the lowest heat. Do not lift the lid repeatedly.

Basmati rice

Basmati benefits from rinsing and a quiet rest. The resting steam finishes the grains without extra boiling and makes them easier to fluff.

Brown rice

Brown rice normally needs more water and 25–35 minutes. Follow the packet because wholegrain varieties differ, and drain any small excess once tender.

How long rice takes

Allow about 10–12 minutes for white basmati plus a 10-minute rest. Brown rice commonly takes 25–35 minutes. Keep the lid on during the rest.

How to fix mushy rice

Spread slightly overcooked rice on a tray for a few minutes so steam can escape. Next time, reduce the water a little and use a lower heat.

Leftover rice safety

Cool cooked rice quickly, ideally within one hour, then refrigerate promptly in a shallow covered container. Use it within one day. Reheat only once until steaming hot throughout, and discard rice left at room temperature for a prolonged period.

The risk comes from spores that can survive cooking and multiply while warm rice sits out; reheating does not reliably undo poor storage.

Common mistakes

Guessing the water, using a pan with a loose lid and stirring repeatedly can all create sticky or uneven rice. Measure the rice and water each time.

For one person, cook one portion rather than making a full family batch. For two, double the main ingredient but keep an eye on pan space: crowding food traps steam and slows browning.
